Different salts pack differently β convert by volume to keep seasoning equal.
Why this matters: all salt is equally salty by weight, but by volume
a teaspoon of fluffy Diamond Crystal holds far less salt than a teaspoon of dense table salt.
Swap them 1:1 by the spoon and a recipe can end up twice as salty. This tool keeps the
actual salt (weight) constant. Grams of any salt are interchangeable 1:1.
Diamond Crystal vs Morton vs table salt
The big gap is between the two kosher brands: Diamond Crystal has light, hollow
flakes, so it's the least dense common salt. Morton kosher is rolled flatter and
packs denser. Table and fine sea salt are densest of all.
Rough volume equivalents for the same saltiness: 1 tsp table salt β 1ΒΌ tsp Morton
kosher β 2 tsp Diamond Crystal. When a recipe just says "kosher salt," it usually
means Diamond Crystal β worth checking before you salt to taste.
